TACO-MEATISH TOSTADA SALAD

If you thought you could still ring the Taco Bell the old fashioned way if you just order a salad, think again.

Taco Bell’s  Fiesta Taco Salad has 770 calories! Even the Express Taco Salad that comes with a few chips instead of the tostada shell has 660 calories!

So, next time you feel the need to “run for the border,” try this dish instead.

 

By roasting your own tostada shells instead of buying the fried packaged ones, and using Skinny Taco Meat-ish filling, low-fat re-fried beans, cheese and sour cream, this is huge plate of food that feels “meaty,” but has just 300 calories and a fraction of the fat.

Now you can get your Mexican fix anytime….without having to wear a poncho!

SKINNY TOSTADA  SALAD

2 corn tortillas

1/2 cup Rosarita low-fat refried beans

1/2  cup Skinny Taco Meat-ish

2  cups shredded lettuce

1 cup shredded cabbage

1/2 cup chopped tomatoes

2 T chopped avocado

2 T fat free sour cream

2 T chopped green onions

1 T sharp 2% cheddar.

Preheat oven to 400

Lightly mist 2 corn tortillas with canola oil and sprinkle with salt.

Toss right on to the rack of the hot oven and bake for 8 minutes.

Heat re-fried beans and Taco Meat-ish in separate bowls in the microwave.

Smear 1/4 cup beans on each tostada and spread the meat mixture on top. Cover with lettuce and cabbage, tomatoes, avocado, sour cream, green onions and cheddar.
